Using phenylphosphonic acid, simple tungstate and Cu(II) compounds as starting materials, an organic-inorganic hybrid Strandberg-type organophosphotungstate, {[(Cu(H2O)(μ-bipy))2(C6H5PO3)2W5O15]}n (bipy = 4,4′-bipyridyl) (1), was assembled successfully under hydrothermal conditions and characterized by physicochem. and spectroscopic methods. Two, 3-step methods to derivatize mono- and multi-functional species with carbonyl (C=O), carboxylic acid (-COOH), and alc. (-OH) moieties were compared and optimized. In Method 1, C=O, -COOH, and -OH moieties were converted to methyloximes (R-C=N-OCH3) with O-methylhydroxylamine hydrochloride (MHA); to Me esters (O=C-R-OCH3) with (trimethylsilyl)diazomethane in methanol (TMSD/MeOH); and to trimethylsilyl ethers [R-OSi(CH3)3] with N,O-bis(trimethylsilyl)-trifluoroacetamide (BSTFA) containing 1% trimethylchlorosilane, resp. Steps 1 and 3 of methods were identical; however, in Step 2 of Method 2, -COOH moieties were derivatized with 10% (volume/volume) BF3 in MeOH or n-butanol (n-BuOH). The BF3/MeOH and BF3/n-BuOH were ineffective at converting species with >2-OH moieties. Average standard deviations for derivatization of 36 model compounds by the 3-step methods using TMSD/MeOH and BF3/MeOH were 7.4 and 14.8%, resp. Average derivatization efficiencies for Methods 1 and 2 were 88.0 and 114%, resp. Despite the lower average derivatization efficiency of Method 1, distinct advantages included a greater certainty of derivatization yield for the entire suite of mono- and multi-functional species and fewer processing steps for sequential derivatization. Detection limits for Method 1 using multi-dimensional gas chromatog./time of flight mass spectrometry (GC × GC-ToF-MS) were 0.3-54 pg/m3. Approx. 100 oxygenated organic species were identified and quantified in aerosols filtered from 39 m3 air in an urban location. Levels of species were 0.013-17 ng/m3 and were nearly all above Method 1 limits of detection.

Vanillin 1,2-propylene glycol acetal was synthesized from vanillin and 1,2-propylene glycol using H3PMo6W6O40·nH2O as catalyst. The factors influencing the synthesis were discussed and the better reaction conditions were found as follows: The amount of vanillin was 3.8 g, the molar ratio of vanillin was 1,2-propylene glycol 1.0 to 2.4, the amount of catalyst was 1.6% in proportion to the total reacting materials, the volume of cyclohexane as the water-carrying agent 4 mL, the refluxing time was 2 h at 88-96 °C and thus the product yield reached over 87%. The results show that the catalyst’s activity is high and the reaction time is short.

Baicalein (5,6,7-trihydroxyflavone), an important active constituent of the traditional Chinese herb Scutellaria baicalensis, exhibited antitumor activity and inhibitory activity against P-gp 170. Recent publications have suggested that African medicinal plants and their derived products could be viable source of new and better trypanocidal drugs. Nowadays, in silico methods are often used in drug discovery processes to identify new potential drug leads. In this study, the authors have developed a small library named Afrotryp, comprising three-dimensional chem. structures of potential trypanocidal compounds derived from medicinal plants in Africa (a total of 321 unique chem. structures). The authors have predicted the pharmacokinetic properties of the library using Qikprop software and employed the three docking/scoring methods implemented in Mol. Operating Environment Dock Tool to assess the affinity of the library dataset towards the binding site of six selected validated anti-Trypanosoma drug targets. It was observed that about 42% of the compounds contained in the Afrotryp dataset were predicted to show a good overall performance in terms of predicted parameters for absorption, distribution, metabolism, elimination and toxicity properties. Docking calculations identified 15 compounds with lowest theor. binding energies toward the studied proteins, nine of which are suited for the treatment of stage 2 human African trypanosomiasis, due to their low polar surface area. Anal. of their binding modes gave basis for the observed unique mol. interactions which exist between the Afrotryp dataset and the six studied drug targets. The results lay the foundations for the rational development of novel trypanocidal drugs with improved potency.

Jackfruit (Artocarpus heterophyllus Lam) occurs abundantly in Brazil, but its seeds are often underutilized in food nutrition. Previously, we showed that roasted jackfruit seeds are an innovative source of chocolate aroma. In this study, we characterized the volatile content of exptl. beverages containing jackfruit seed flours as compared to non-alk. cocoa powder. The three key results of this study were that (i) the fermented jackfruit seed flour beverage (FJSBev) was similar to the non-alk. cocoa powder beverage (CTRLBev); (ii) similar volatile groups (acids, alcs., aldehydes, ester, furans, and pyrazines) were identified in the samples (FJSBev and CTRLBev); (iii) the beverages contained volatile compounds with a low threshold of cocoa attributes (butter, cocoa, coffee, floral, fruit, green, honey, mushroom, nut, and roasted). To conclude, the beverage formulation containing fermented jackfruit seeds had more volatile compounds and odor-active constituents than that with non-alk. cocoa powder. Collectively, our data demonstrate that fermentation is critical to producing a chocolate aroma. Fermented jackfruit seed flours could be used as a partial or total additive to improve chocolate aroma in food formulations.

A small isolation and reaction chamber was set up between the ion source and the injection port of mass spectrometer to effectively eliminate the interference of external environment in the process of analyzing samples. The improved exptl. apparatus (MIPI-MS) could achieve online and high-throughput anal., with minimal sample preparation steps. Further, two types of tobacco flavoring essences with the similar appearance and physicochem. parameters were employed to verify the usability of the promising method in the field of quality monitoring. Firstly, the mass spectral fingerprint of each essence was established by the improved MIPI-MS method within 2 min. Then, two multivariate statistical processes were carried out to analyze mass spectral data. The similarity results indicated that the thresholds of tobacco flavoring essences from different batches were 1.512 and 2.638, resp. The first three principal components of the established PLS-DA described 93.6% of the total variability, and provided a visualized comparison for the two types of flavoring materials. Finally, the adulterated samples were successfully distinguished by employing the two multivariate statistical processes.
