Three special natural perfumes as cigarette flavor were produced by water distillation, enzyme treating and Maillard reaction from natural edible fungi: Lentinus edodes. The experiments with the perfumes were conducted. The results showed that special fragrant was endowed and smoking and moist quality of cigarette was significantly improved with the cigarette flavor by enzyme treating; both fragrant and sweet of cigarette were improved and smoking was soft with the cigarette flavor by Maillard reaction; and fragrant was improved and awful aftertaste was effectively reduced with the cigarette flavor by water distillation The volatile components in the perfumes were analyzed, and 23, 50 and 38 compounds were identified in the cigarette flavors by water distillation, enzyme treating and Maillard reaction resp.
