The phys. and chem. properties and aroma characteristic of fructone were outlined. Using citric acid as catalyst, fructone was synthesized by the condensed carbonylation of Et acetoacetate and 1,2-ethanediol. The application of fructone in flavor was studied. It is seen that in the future that fructone will be more and more widely used in flavor.
