Vanillin propylene glycol acetal was synthesized under microwave irradiation from vanillin and 1,2-propylene glycol in the presence of citric acid. The factors that influenced the reaction under microwave heating were investigated, the yield of 41.04% was obtained under conditions of 1,2-propylene glycol_vanillin=1.2:1 (mol/mol), citric acid 2 g/mol (based on the amount of vanillin), irradiation power 600W, time 12 min. Its application in baked food was tested.
